What they do

Pambasos is a Mexican food truck that brings real authentic Mexican food to the westside of town. They have the best street tacos in town and cut their own carne asada. The Pambaso (the truck’s namesake) is the most authentic item on their menu–the recipe originated in Mexico City. It’s a sandwich dipped in enchilada sauce and grilled, so it has a crispy chili bun stuffed with a chorizo and potato hash topped with queso fresco, sour cream and lettuce. The truck is also known for its yummy breakfast burritos at the Golden Farmers Market in the summer.


Pambasos started serving customers in 2016 when it started serving food at the Golden Farmers Market. From there, they found their place at several breweries across town, including Golden City Brewery, Holidaily Brewing Company and Bruz Beers. Fans can still find them at the Golden Farmers Market every Saturday all summer long and they also do a lot of private parties and catering, especially graduation parties and weddings. Pambasos already has a busy summer schedule, booking block parties throughout the community. Gus, the Pambasos chef, has been cooking professionally for more than 15 years, starting when he was a teenager. He learned to cook with his mama in Mexico growing up. They both share a deep love for cooking and love working in the kitchen. Gus’s mom helps him in the kitchen often–she always makes the rice.
