Quesadillas with Honey Smoked Salmon

Servings: 12 Wedges


6 oz Honey Smoked Salmon

4 Lg Tortillas

1/3 C Red Onion, sliced thin

½ Red Pepper, seeded and chopped

Small can Green Chilies

1 C Pepper Jack cheese, grated

¼ C Fresh Cilantro

2 T Canola oil


Sour Cream


Place 2 Tortilla on a flat surface. Cover evenly with red onion, red pepper, green chili, Honey Smoked Salmon, cilantro, and cheese. Cover each with remaining 2 tortillas. In a skillet, heat 1 t. oil over medium heat. Add 1 quesadilla and cook 3 minutes per side, until browned and cheese is melted. Can be made in a 300°F oven until cheese melts. Repeat with remaining quesadillas. Cut into 6 wedges and serve with Pineapple/Mango Salsa and sour cream.
